Bhaga Śāstra — Recipes of the Culinary Śāstra

by Mahādeva

English

Mahādeva's Bhaga Śāstra — the traditional science of food and cooking, presented as 301 recipes in English across 14 sections. Each gives its ingredients in traditional measures (the *padi* and its fractions) and a step-by-step method, covering rice and the millets, porridges, pancakes and Indian breads, kuṣka and pongal, dals and curries, morkuḻambu and kūṭṭu, thogayal and vaḍagam, appaḷam, snacks and sweets, and closing with a table for converting traditional measures. This is a practical manual of the culinary śāstra rather than a versed scripture, and it is given in English as it stands in the source; no Sanskrit original accompanies it. (The source document is titled '402 Recipes'; it contains 301 discrete numbered recipes, some of which give more than one method.)
